While generally softer than high-carbon steel, it offers a good balance of sharpness, durability and ease of cleaning. Note: with a plastic handle, dishwasher cleaning is possible, though hand washing and drying are still recommended to preserve cutting performance. With a wooden handle, dishwasher use is not advised, as it may cause cracks or deformation of the wood.
